Question by cpeytonrn: When cooking in a BBQ smoker, is your cook time based on the total weight of the contents or the average?
For example: three 5 lb slabs of ribs, do you multiply your time per lb times 5 or 15?

When I am smoking meat It doesn’t matter how much meat I actually use, it all cooks in about the same time. Use the same cooking time that you would use for just one 5lb slab of ribs.

Don’t be to concerned with the LB’s and time. If you are smoking the ribs your main worry is keeping your temp between 200f-250f. Keep your ribs out of the direct heat. Soak your wood chips in apple cider/juice and when you add your wood chips and the ribs, (I recommend you start the ribs upside down) don’t open the lid for at least 1 hour. After that flip the ribs and bast with the apple cider. Add more wood chips and close for another hour. The cooking time will be about 3 1/2hrs. but check them after 2hrs. put your BBQ sauce on about 15-20mins before they are done.

The size of the pieces, not total. One slab or six, time and temp. is what counts. And my ribs take about 6 hrs. Dry rub, no sauce.
